Instructions
Prepare the Short Ribs
- Preheat oven to 160°C (325°F).
- Season the short ribs generously with salt, black pepper, and garlic powder.
- Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat.
- Sear the ribs on all sides until deeply browned, about 3–4 minutes per side.
- Remove the ribs and set aside.
Build the Braising Sauce
- Add pearl onions and smashed garlic to the pot and cook for 3–4 minutes.
- Stir in the tomato paste and cook for 1 minute.
- Pour in the red wine and scrape up any browned bits from the bottom of the pot.
- Simmer for 5 minutes to reduce slightly.
- Add the beef broth, thyme, and rosemary.
Braise the Ribs
- Return the short ribs to the pot.
- Cover and transfer to the oven.
