Ingredients (Serves 2–3)

Sweet Potatoes

  • 2 large sweet potatoes
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp cinnamon
  • Salt and black pepper, to taste
  • 1 tbsp honey, for glazing

Herbed Yogurt Sauce

  • ¾ cup Greek yogurt
  • 2 tbsp fresh mint or parsley, finely chopped
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • Salt and black pepper, to taste

Toppings

  • ¼ cup crushed pistachios
  • Fresh herbs, chopped
  • Honey, for drizzling
  • Chili flakes (optional)

Instructions

1. Prepare the Sweet Potatoes

  1. Preheat oven to 200°C (400°F).
  2. Wash and dry the sweet potatoes.
  3. Using a sharp knife, make thin slices across each potato, stopping just before cutting all the way through.

2. Season

  1. In a small bowl, mix olive oil, smoked paprika, garlic powder, cinnamon, salt, and pepper.
  2. Brush the mixture generously over the potatoes, making sure some gets between the slices.

3. Roast

  1. Place the potatoes on a baking tray lined with parchment paper.
  2. Roast for 45–55 minutes, brushing occasionally with the pan juices.
  3. During the last 10 minutes, brush with honey and return to the oven until caramelized and tender.

4. Make the Yogurt Sauce

  1. In a bowl, combine Greek yogurt, herbs, garlic, lemon juice, salt, and pepper.
  2. Mix until smooth and refrigerate until ready to serve.

5. Finish & Serve

  1. Transfer the roasted sweet potatoes to a serving plate.
  2. Spoon or drizzle the herbed yogurt sauce over the top.
  3. Sprinkle with crushed pistachios and fresh herbs.
  4. Finish with a drizzle of honey and chili flakes if desired.
