ROLO RITZ COOKIES
Ingredients
- 24 Ritz crackers
- 24 ROLO caramel candies, unwrapped
- 1 cup semi-sweet chocolate chips
- 1 tbsp vegetable oil
- Sprinkles (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Arrange 24 Ritz crackers on the baking sheet.
- Place one ROLO candy in the center of each cracker.
- Bake for 3–4 minutes, just until the ROLO candies soften.
- Remove from the oven and gently press another Ritz cracker on top of each candy to form a sandwich.
- Allow to cool completely.
Chocolate Coating
- In a microwave-safe bowl, combine the chocolate chips and vegetable oil.
- Microwave in 20-second intervals, stirring between each interval, until smooth.
- Dip each cookie halfway into the melted chocolate or drizzle the chocolate over the tops.
- Add sprinkles immediately if using.
- Place the cookies on parchment paper and let the chocolate set completely.
