- 1½ cups creamy peanut butter
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Chocolate Coating
- 2 cups semi-sweet chocolate chips
- 1 tbsp coconut oil or vegetable shortening
Instructions
1. Make the Peanut Butter Filling
- In a large bowl, beat together the peanut butter and softened butter until smooth.
- Mix in the vanilla extract.
- Gradually add the powdered sugar and mix until a soft dough forms.
2. Shape the Bites
- Roll the mixture into 1-inch balls.
- Place on a parchment-lined baking sheet.
- Freeze for 20–30 minutes until firm.
3. Prepare the Chocolate
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring between each until smooth.
4. Dip the Bites
- Using a fork or toothpick, dip each peanut butter ball into the melted chocolate.
- Leave a small circle of peanut butter visible on top for the traditional Buckeye look.
- Return to the parchment-lined tray.
5. Chill
- Refrigerate for 30 minutes or until the chocolate is fully set.
6. Serve
- Enjoy chilled or at room temperature.
Tips
- If the mixture feels too soft, add a little more powdered sugar.
- Use natural peanut butter only if it’s well stirred and not too runny.
- Store in an airtight container in the refrigerator for up to one week.
- Sprinkle a tiny pinch of flaky sea salt on top before the chocolate sets for extra flavor.
