Ingredients
Salmon
- 2–3 large salmon fillets (skin on or off)
- Olive oil or melted butter, for brushing
- Salt and black pepper, to taste
Creamy Stuffing
- 8 oz cream cheese, softened
- ½ cup spinach, chopped
- ¼ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp lemon zest
- 1 tbsp lemon juice
- ½ tsp paprika

- Fresh parsley, chopped
- Lemon wedges
Instructions
1. Prepare the Salmon
- Preheat oven to 400°F (200°C).
- Pat the salmon fillets dry.
- Using a sharp knife, carefully cut a pocket into the side of each fillet without cutting all the way through.
- Season the salmon with salt and black pepper.
2. Make the Filling
- In a bowl, combine the cream cheese, spinach, Parmesan cheese, garlic, lemon zest, lemon juice, and paprika.
- Mix until smooth and well combined.
3. Stuff the Salmon
- Fill each salmon pocket with the cream cheese mixture.
- Brush the outside of the salmon lightly with olive oil or melted butter.
4. Bake
- Place the stuffed salmon in a lightly greased baking dish.
- Bake for 18–22 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
5. Serve
- Garnish with fresh parsley and lemon wedges.
- Serve immediately.
